Quick and easy mid-week meal. Serve with a large mixed salad. Ingredients:
4 slices bacon |
5 ounces dried spaghetti |
2 tablespoons pesto sauce |
8 black olives, pitted |
2 tablespoons fresh basil, torn |
parmesan cheese, curls to garnish |
salt and black pepper |
Directions:
1. Cook spaghetti in a pan of boiling water as per pack instructions. Meanwhile, place bacon slices under a pre-heated broiler and cook for approximately 1-2 minutes each side. 2. Cut into large pieces. Spoon the pesto on to drained spaghetti and toss together with bacon, olives and basil leaves. 3. Garnish with parmesan and season. |
