Bacon-pecan Stuffed Mushrooms |

These go great with steak as an appetizer or even as a side. Ingredients:
1 pound large fresh mushrooms |
4 tablespoons butter, divided |
2 tablespoons canola oil |
1/4 tsp salt |
2 tablespoons finely chopped onion |
1 cup soft breadcrumbs |
6 bacon strips, cooked and crumbled |
2 tablespoons chopped pecans |
2 tablespoons sherry or beef broth |
2 tablespoons sour cream |
2 tablespoons minced chives |
Directions:
1. Remove the mushroom stems and discard or save for another use. 2. In a large skillet, heat 2 tablespoons butter and oil over medium-high heat. Saute the mushroom caps for two minutes on each side; sprinkle with salt. Remove with a slotted spoon to paper towels. 3. In the same skillet, saute onion in remaining butter until tender. 4. Remove from heat and stir in remaining ingredients. 5. Spoon mixture into mushroom caps. Place on a broiler pan and broil 5 from the heat for 2-3 minutes or until filling is browned. 6. Serve warm. |
