Bacon Onion And Cheese Quick-bread |

This is good hot or cold. Great with soups. Ingredients:
1/2 lb. bacon, cooked and crumbled |
1 tbsp. bacon drippings |
1 cup onions, chopped |
1 1/2 cups flour |
1 tbsp. baking powder |
1/2 cup butter |
1 egg, beaten |
1/2 cup milk |
1 cup sharp cheddar cheese, grated |
topping |
1-2 tbsp. butter, melted |
1/4 cup poppy seeds |
1/2 cup cheese, grated |
Directions:
1. Saute onion in reserve bacon drippings. 2. Sift together flour and baking powder and cut in butter. 3. Stir in egg and milk. 4. Add cheese, onions and bacon. 5. Spread in a greased 8x8 pan 6. Topping: 7. Drizzle butter over top. Sprinkle with poppy seeds and cheese. 8. Cut into squares. |
