My mom's breakfast... Ingredients:
2 slices bacon, cut into small pieces |
1 small red onion, chopped |
2 eggs, lightly beaten with fork |
2 teaspoons olive or vegetable oil |
salt & pepper to taste |
Directions:
1. Heat oil in skillet over medium heat. Cook bacon and onion, stirring occasionally, until bacon is crisp. 2. Combine eggs, salt & pepper, pour into skillet. Distribute bacon and onion evenly. 3. As eggs set on bottom, turn and cook other side. When omelet is set, fold with fork and transfer to a serving plate. |
