Bacon, Mushroom Toast Rolls |

This is a fun easy appetizer. I make them a fair amount because I can make them up when I have time and keep them in the freezer until we want them. They freeze really well. Just put them on a cookie sheet once they're rolled up, freeze them and then transfer into freezer bags. Read more . The dill pickle is my favourite part! Now if company drops in unannounced you have appetizers ready on the table at the drop of a hat and don't you look good! Ingredients:
4 slices cooked bacon, finely chopped |
1/2 pkg. fresh mushrooms, finely chopped |
1 medium onion, finely chopped |
4 oz. light cream cheese, softened |
12-15 slices sandwich bread, crusts removed (i use whole-wheat), depending on how thick you spread the cream cheese mixture |
4 lg. dill pickles |
1/4 cup melted butter |
Directions:
1. Sauté mushrooms, and onions until tender, not crisp. 2. Stir in cheese and bacon. Mix well. 3. Roll bread lightly with a rolling pin. Spread each slice with about 2 tbsp. filling. 4. Slice pickles lengthwise into quarters. Place one piece of pickle lengthwise on each bread slice and roll. Fasten with a toothpick. 5. Place seam side down on a baking sheet. (Can be frozen at this point) 6. Brush rolls with melted butter. 7. Bake at 375F for 20 minutes. Remove toothpicks. 8. Serve hot. 9. Enjoy! |
