Bacon, Mushroom and Sour Cream Scramble |

A fast, tasty breakfast scramble. Ingredients:
2 eggs |
1/3 oz bacon, or 2 tbsp. bacon bits |
4 tsp sour cream, or 2 tbsp. reduced fat |
2/3 c. mushrooms, cleaned and sliced |
Directions:
1. Spray a small frying pan with cooking spray and place over medium heat. Add mushrooms, spreading them evenly over the pan. 2. While mushrooms begin to cook, scramble together eggs and bacon. Pour mixture over mushrooms and scramble with a fork over medium heat until cooked through. 3. Top with sour cream and serve warm. |
