Bacon, Lettuce, and Tomato Sandwiches |

It's hard to beat your basic BLT - bacon, crisp lettuce, and sliced tomato served on toasted bread with a smear of mayonnaise and a little salt and pepper. Ingredients:
4 tablespoons low-fat mayonnaise (such as hellman's) |
8 (1-ounce) slices white or wheat bread, toasted |
1 2 slices 40%-less-fat bacon, cooked (such as gwaltney's) |
8 lettuce leaves |
8 (1/4-inch-thick) slices tomato |
1/4 teaspoon salt |
1/4 teaspoon freshly ground pepper |
Directions:
1. Spread 1 tablespoon mayonnaise over each of 4 bread slices. Top each with 3 pieces bacon, 2 lettuce leaves, and 2 tomato slices. Sprinkle tomatoes evenly with salt and pepper. Top each with a remaining bread slice. |
