Bacon & Hominy Scrambled Eggs |

This is more of an unusual combination than a recipe, but we like it. Ingredients:
1/4 lb bacon |
20 ounces yellow hominy |
6 eggs |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook the bacon in a frying pan until crisp. Remove bacon and drain all but 2 Tb of bacon grease. 2. Drain the can of hominy and add to the bacon drippings. Fry over medium heat until hominy is lightly brown. 3. Beat together the eggs, salt and pepper. Add to hominy and cook, stirring frequently, until eggs are done. 4. Crumble bacon over the top and serve. 5. Try shredded cheese melted over the top too, if you want to. |
