Bacon Flavored Chicken Stew |

This was a great dish. I made it expecting my nine year old to say no way dad! He scarfed down his 1st bowl, then another.... Goes well with a fresh loaf of French bread. Ingredients:
2 boneless chicken breasts, cut into 1/2' pieces |
2 medium red skin potatoes, skinned, and cut into 1/4 pieces |
3 large carrots, finely chopped, 1/4 pieces |
3 stalks of celery finely chopped, 1/4 pieces |
3 medium white onions, coarsely chopped |
2 gloves of garlic, finely minced |
4 full cups of chicken stock |
1 tbl parsley |
4 strips of bacon, finely chopped, 1/8 pieces |
bacon fat |
1 tsp chopped chives |
1/2 tsp parsley |
1/2 tsp celery seeds |
1/2 tsp cumin seeds |
2 garlic gloves finely minced |
1/4 tsp ground sage |
fresh black pepper, to taste |
4 tbl corn starch |
Directions:
1. Cook some morning bacon, reserving the fat and at least 4 strips of bacon. 2. Cook the chopped chicken in the bacon fat, until no longer pink inside. 3. Remove and strain. 4. Place the 4 cups of chicken stock in a slow cooker and heat it up. 5. Add all the ingredients except the bacon and cornstarch. 6. Cook on low setting for 7 hours. 7. After 7 hours, remove a cup or 2 of stock. 8. Using a whisk, mix the cornstarch into the removed stock, 9. Add this back into the stew, and fully incorporate it. 10. Add the chopped bacon. 11. Cook for 1 more hour and adjust the fresh ground pepper to taste. 12. Serve with a bit more of the chopped chives as garnish. |
