Bacon Feta Greek Pasta Salad |

A fabulous greek pasta dish with turkey bacon, feta, black olives, vegetables and pepperoncini peppers. It is excellent served either hot or cold and can be served as a main dish, pasta salad, or side dish. Ingredients:
1 (12 oz) package of whole wheat penne pasta |
3 slices turkey bacon, cooked and crumbled |
1 green bell pepper, chopped |
1 red bell pepper, chopped |
1 cup baby spinach, chopped |
1/2 cucumber, chopped |
1/4 cup black olives, sliced |
8 pepperoncini peppers, chopped |
1 tomato, chopped |
1 red onion, sliced |
1/2 cup absolutely fabulous greek/house dressing (from this allrecipes) |
1/2 cup feta, crumbled |
Directions:
1. Bring a large saucepan full of water to a boil. Once boiling, add the pasta and let it cook for about 8 minutes or until it is al dente. 2. Meanwhile, in a skillet sprayed with cooking spray, add the bacon and cook per package directions. 3. Once the pasta is done, drain it well. 4. Add the drained pasta to a large bowl. Add the bacon, red and green bell pepper and vegetables. Pour the dressing on top and toss until thoroughly distributed. Top with crumbled feta cheese. |
