                    I love growing these beautiful vegetables - but they are a challenge to come up with creative ways to serve them. My husband will eat these! Ingredients: 
                    
                        
                                                1 medium eggplant  |  
                                                9 slices of bacon  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Wash eggplant well. 2. cut into 3 even slices and split the slices again into 3, leaving you 9 stalks of eggplant. 3. Work quickly as they do discolor. 4. Wrap the bacon around the  stalks  and secure with a tooth pick. 5. Grill until eggplant is softened and the bacon is crisp.                              |
