Bacon & Chive Red Potato Salad

Delicious. I will never make potato salad any other way from now on!
Ingredients:
1 lb red potatoes
4 strips bacon
1/4 cup chopped fresh chives
1/2 large red onion, chopped
3/4 cup mayonnaise
1 tbsp yellow mustard
1/2 tsp salt
1/2 tsp ground pepper
Directions:
1. Add potatoes to large pot and fill with water to cover potatoes
2. *Optional: Add a tsp of season-all seasoning for seafood or similar to the water when boiling potatoes for more flavor.*
3. Boil potatoes 12- 20 minutes until fork tender
4. Drain and cool potatoes. Cool quicker by placing potatoes in the fridge or freezer while preparing remaining ingredients.
5. Pan fry bacon until crispy. Cool on paper towels then break into pieces
6. In large bowl mix together mayonnaise, mustard, salt and pepper
7. When potatoes are cooled, cut into pieces and add to large bowl
8. Add bacon bits, chives and chopped onion.
9. Gently toss to coat.
10. Refrigerate until serving.
