Bacon Cheese & Veggie Quiche |

I make these 2 at a time and microwave a slice each morning for breakfast. Ingredients:
2 (9 inch) unbaked pie shells |
2 cups bacon |
8 eggs |
2 cups half-and-half |
14 ounces artichoke hearts, diced |
28 ounces diced tomatoes |
2 cups colby-monterey jack cheese, shredded |
2 cups mozzarella cheese, shredded |
16 ounces frozen chopped spinach |
Directions:
1. thaw and pat dry spinach. 2. preheat oven to 375 degrees. 3. press pie shells into pie pans. 4. mix all ingredients together. 5. pour equal amounts into pie shells. 6. bake for 30 mins or until center is set. |
