Skillet scalloped potatoes, with bacon and cheddar! Great side dish for breakfast, lunch or dinner. Ingredients:
6 slices bacon, cut in 1-inch pieces |
1 white onion, chopped |
2 lbs yukon gold potatoes, thinly sliced |
2 tablespoons butter |
1 cup old cheddar cheese, shredded |
1/2 cup sour cream |
1/3 cup chives, chopped |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
Directions:
1. Cook bacon in large skillet, over medium heat, drain on paper towel, drain fat except for 3 tablespoons. Add onions; cook 5 minutes, add potatoes, cover. Cook over medium low heat 20 to 25 minutes, or until potatoes are tender, stirring occasionally. 2. Add butter, cheese, bacon, sour cream, chives, salt and pepper to skillet, toss to coat. Cook until heated through about 4 minutes. |
