Bacon, Cheddar & Egg-Topped Sandwich |

WW Momentum cookbook, p. 20 Original recipe calls for english muffin. Substituted here for wheat bread, although I like the Oroweat Sandwich Thins. Ingredients:
2 large eggs |
1 tsp canola oil |
2 oz canadian bacon |
1 1/2 oz cheddar cheese |
4 tomato slices |
1 slice, whole wheat bread |
1 tsp chives, snipped fresh |
Directions:
1. Poach eggs, drain. 2. Heat oil in skillet, add bacon and cook on each side until heated through. 3. Cut bread in half, placing one-half on 2 plates. Top each with a slice of cheddar. Top with tomatoes, 1 slice of bacon and 1 egg. Sprinkle with chives. Yummmm. |
