Bacon & Cabbage Pappardelle |

A delicious pasta dish that works beautifully with cabbage. Ingredients:
1/4 head cabbage, thinly sliced |
1 onion, finely chopped |
1 tablespoon olive oil |
2 tablespoons butter |
1/2 lb bacon, chopped |
1 cup sour cream |
1 (250 g) package pappardelle pasta |
salt and pepper |
Directions:
1. In a large pot, add the olive oil and bacon and cook until well done. Drain and set the bacon back in the pot, reserving the bacon fat. 2. In a large pan, add the butter and onions and saute until soft. Add the cabbage and cook until tender and slightly golden. Add a drizzle of olive oil and season with salt and pepper. 3. Transfer the cabbage mixture to the pot with the bacon pieces and some of the bacon fat for moisture if needed. 4. Cook noodles according to the package directions. Once cooked, drain (reserving some of the pasta water) and add the noodles to the cabbage pot. 5. Add sour cream and toss to combine. Add some of the pasta water to moisten pasta if required. |
