Bacon-Butterscotch Chip Cookies |

After reading about 'Bacon Chocolate Chip Cookies', I thought that it sounded good and worth a try. Found a few recipes, but then I 'tweaked' a basic cookie dough recipe, as I was out of chocolate chips. I substituted butterscotch chips and they turned out to be very good. As for the bacon, I just used a low-sodium which I had on hand. If using regular bacon, you might want to omit the salt in the recipe. Ingredients:
2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup butter (room temp) |
3/4 cup brown sugar (packed) |
3/4 cup white sugar |
2 eggs |
1 teaspoon vanilla extract |
1 cup butterscotch chips |
1/3 cup chopped cooked bacon |
Directions:
1. Preheat oven to 350ºF. Line a cookie sheet with Silpat (or other silicone mat), parchment paper will also work. 2. Whisk together flour, baking soda and baking powder & salt, set aside. 3. Using an electric mixer, beat the butter, brown & white sugar till smooth. Add 1 egg, beat till blended, then add the last egg, and vanilla extract. 4. Slowly add the flour mixture, a little at a time, till it's mixed well. Stir in bacon and butterscotch chips. 5. Drop by tablespoons onto cookie sheets. 6. Bake in oven for about 10 - 12 minutes, or until the edges turn golden brown. Remove from oven, let cool for a few minutes on the sheet then move to a wire rack. |
