Simple fair with what's left. Ingredients:
1 pack rough cut back bacon (smoked is fine, just use less salt later) |
1 good sized onion chopped |
2-3 carrots finely chopped |
1 handful left over chicken (cooked) |
1 cup lentils (red) soak and rinse as per instructions |
1.5 litre chicken stock/broth |
salt and pepper to taste |
Directions:
1. heat bacon in soup pot on med/high heat for 5 mins. 2. add onion and carrots to soften. 3. when bacon fat starts to golden add stock, lentils and chicken. 4. leave to simmer for 10min, do not stir. 5. sift the scum with spoon if need be then allow to cool before blending. 6. bring back to the heat, add salt and pepper to taste. |
