Wanted something for breakfast and different. These are easy and taste great. Made them and individiually wrapped them. Now all I need to do is pull one out of freezer, and off to work I go. Zap in microwave and there's breakfast! Read more ! Ingredients:
1 3/4 cup flour |
2-1/2 tsp baking powder |
1/2 tsp salt (optional) |
1/2 tsp pepper |
1/2 cup chopped broccoli (or veggie of choice) |
6-10 bacon slices (cooked and crumbled) |
1/2 cp cheddar cheese (shredded) |
1/4 cup shredded mozzerella |
2 tbsp parmesean |
1 egg beaten |
3/4 cup milk |
1/3 cup oil |
Directions:
1. Cook bacon and crumble 2. Spray a 12 muffin pan well with spray 3. Combine first 9 ingredients and mix well (make sure to incorporate the flour well) 4. Make a well and add egg, milk & oil 5. Blend till moistened and mixed 6. Fill each muffin pan 2/3 full 7. Bake at 400 till golden brown (20-25 minutes) 8. Remove from pans immediately. |
