Bacon Bread Ingredients:
1 pound (really good) bacon |
3 cups all-purpose flour |
1/4 cup sugar |
2 tablespoons baking powder |
2 teaspoons salt |
3 eggs |
1/2 teaspoon liquid smoke |
1-1/2 cups milk |
Directions:
1. Brown bacon until crisp,drain on paper towels. 2. Reserve 1/3 Cup of the bacon drippings. 3. Cool bacon,crumble and set aside. 4. In a large bowl,combine the flour,sugar,baking powder and salt. 5. In a medium bowl,whisk together reserved bacon drippings(cooled to room temperture),and the eggs,liquid smoke and milk. 6. Add egg mixture to dry ingredients,stir ( just )until moistened. 7. Fold in bacon. 8. Pour batter into a greased 5x9 loaf pan. 9. Bake in a preheated 350 degree oven for 45 to 50 minutes or until a toothpick inserted in center comes out clean. 10. Cool in pan 10 minutes,turn out onto cooling rack and cool completely. 11. Store in airtight container 12. Makes 1 loaf |
