Whoa! I wish I had had this recipe prior to the Super Bowl! This comes from Ed Levine at seriouseats. Makes 1 3/4 cups of dip. Ingredients:
6 thick-cut slices bacon |
1 small onion, minced |
2 tablespoons all purpose flour |
1/2 cup whole milk |
1/2 cup lager beer |
1 teaspoon worcestershire sauce |
cayenne pepper to taste |
1/2 pound blue cheese, crumbled |
you favorite breadsticks |
Directions:
1. In a large skillet fry the bacon over moderate heat until crisp. 2. Drain on paper towels. 3. Crumble coarsely. 4. Pour off all but 2 tablespoons fat from skillet, add the onion and stir 3 minutes. 5. Add the flour and stir 3 minutes longer. 6. Whisking, add the milk and beer and then add the Worcestershire sauce and cayenne. 7. Bring mixture to a low boil, whisking. 8. Cook, whisking for 2 minutes. 9. Remove from heat. 10. Add the bacon and blue cheese and stir until cheese is melted. 11. Transfer dip to a small bowl. 12. Serve with breadsticks. |
