A low calorie twist for green beans. From cooking light magazine. Serving size 3/4 cup: Calories 75; Protein 3.4g; Fat 2.6g (sat.0.5g, mono 1.4g, poly 0.5g) Carb 11.8g; Fiber 2.8g; Chol 0mg; Iron 1.4mg; Sodium 50mg; Calc 54mg. Ingredients:
2 pounds green beans |
1/4 cup shallots, minced |
2 bacon slices |
1/4 cup white balsamic vinegar |
3 tbsp. almonds, coarsly chopped |
2 tbsp. brown sugar |
Directions:
1. Boil a pot of water and add green beans. Cook for 2 min., drain and rinse under cold water. Set aside. 2. In a small skillet over med. high heat, cook bacon until crisp. Remove bacon from skillet and crumble; set aside. 3. Add shallots to bacon grease in skillet, and saute for 1 min.. 4. Add almonds, saute for 1 min. 5. Remove shallots and almonds from skillet, let cool. 6. Add sugar and vinegar to skillet; stir until sugar dissolves. 7. Add crumbled bacon to green bean mixture. 8. Pour vinaigrette over beans, toss to coat and serve. Serving size 3/4 cup. |
