Bacon Avocado Potato Salad |

This recipe comes from one of my childhood friends Rhoda. She is a great cook and a great entertainer. This is a dish that is always on her buffet, no matter what occasion, no matter what party....always a huge hit. Read more . Enjoy Ingredients:
10 medium red skinned potatoes scrubbed |
2 avocados halved pitted peeled and cubed |
1 tablespoon fresh lime juice |
8 slices bacon cooked crisp and diced |
1/2 cup sliced green onion |
3 tablespoons chopped cilantro |
salt and pepper to taste |
dressing |
1 cup mayonnaise |
2 tablespoons lime juice |
1 tablespoon chopped cilantro |
Directions:
1. Quarter or cube potatoes then place in cold water to cover in large pot. 2. Bring to a boil then reduce heat slightly and cook until potatoes are tender. 3. While potatoes cook place cubed avocados in bowl and sprinkle with lime juice and toss to coat. 4. Drain potatoes and allow to cool to room temperature. 5. Place potatoes, bacon, green onion and cilantro in a large serving bowl. 6. Season with salt and pepper and toss lightly to combine. 7. Mix together the dressing ingredients then add to potatoes and mix thoroughly. 8. Gently fold in cubed avocados and serve immediately. |
