This is one of my food staples. Quick and easy, anyone can cook it. Ingredients:
1 tablespoon olive oil |
1 onion |
2 garlic cloves |
100 g streaky bacon |
1 courgette |
6 mushrooms |
2 tablespoons red wine vinegar |
1 (400 g) chopped tomatoes |
400 ml water |
salt |
pepper |
basil |
300 g dry pasta |
Directions:
1. Chop onion and fry in olive oil until softened. 2. Add chopped garlic and bacon and cook for five minutes. 3. Add chopped courgette and mushrooms and fry for 3 minutes. 4. Add red wine vinegar and cook off till almost all liquid has disappeared. 5. Put chopped tomatoes and water into the pan and cook gently for approximately 10 minutes 6. Season to taste and add basil to taste. 7. Boil water and cook pasta for time stated on pack. |
