BACON AND SWISS QUICHE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Barnes Estate in Canton, Texas in 1981. Ingredients:
2 pieces phyllo dough cut into 3 strips each |
3 large eggs |
1/4 cup egg substitute |
1 cup evaporated milk |
2 tablespoons all purpose flour |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/4 teaspoon ground nutmeg |
1/2 cup swiss cheese grated |
4 ounces cooked crisp bacon diced |
Directions:
1. Preheat oven to 350 then coat pie plate with cooking spray. 2. Gently lay dough in pie plate one piece at a time coating each layer with cooking spray. 3. Whisk eggs, egg substitute, milk, flour, salt, pepper and nutmeg. 4. Sprinkle cheese and bacon over dough then pour in egg mixture. 5. Place on baking sheet and bake until firm then allow to cool and cut into wedges. |
