Bacon and Potato Frittata |

Feel free to add any ingredients you have on hand. Recipe is from Woman's World. Ingredients:
4 slices bacon, cut into 1-inch pieces |
1 1/2 cups potatoes, cut into 1/2-inch cubes |
1 onion, chopped |
6 eggs |
1/2 cup water |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
2 cups frozen broccoli florets, thawed |
3/4 cup cheddar cheese, shredded |
Directions:
1. Place bacon in 10-inch nonstick skillet over medium-high heat. 2. Cook, stirring occasionally, until browned, 5 minutes. 3. Add potatoes and onion; cover. 4. Cook, stirring occasionally, until tender, 6-7 minutes. 5. Beat eggs, 1/2 cup water, 1/2 t salt and 1/4 t pepper; stir in broccoli and 1/2 cup cheese. 6. Add to skillet, cover. 7. Over medium heat, cook until set, 8-10 minutes. 8. Remove from heat. 9. Sprinkle with remaining cheese; cover. 10. Let stand until cheese is melted, 2-3 minutes. |
