BACON AND ONION SPANISH RICE DATED 1962 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Morgan Estate in Mission, Texas in 1997. Ingredients:
6 slices bacon |
1 cup uncooked rice |
1 cup chopped onion |
2 cans tomatoes |
1 teaspoon salt |
1 chopped bell pepper |
Directions:
1. Fry bacon until crisp then drain well. 2. Fry rice and onions in bacon grease until brown. 3. Add remaining ingredients to pan and cook covered until tender. 4. Add water as necessary if pan goes dry. |
