I love making savory quick breads like this one. It really goes well with soups and stews, and it is a nice switch from plain old bread or biscuits. Ingredients:
8 strips bacon |
1 large onion, chopped |
2 cups flour |
1 tablespoon baking powder |
1 tablespoon sugar |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
1/8 teaspoon cayenne |
2 large eggs |
1 cup sour cream |
1/4 cup butter, melted |
Directions:
1. Preheat oven to 350 degrees. Grease a 9-inch loaf pan. 2. Cook bacon in skilled until crisp. Drain, then dice coarsely. Remove all but 2 tablespoons of fat. Add onion and cook for 2 minutes or until tender. 3. Mix flour, baking powder sugar, salt, pepper and cayenne in large bowl. 4. Whisk eggs, sour cream and butter until blended; stir in bacon and onion. Pour liquid mix over dry ingredients and fold in just until combined. . 5. Put into prepared pan and bake for 50 minutes or until it tests done. 6. Cool in pan for 10 to 15 minutes, then cool completely on a wire rack. |
