Good supper Ingredients:
8 slices bacon, chopped |
1 tbsp. vegetable oil |
1/2 lb. zucchini, diced into 1/4 inch pieces |
4 lg. eggs |
1/4 c. milk |
3/4 c. light cream |
salt and pepper to taste |
1 tbsp. grated parmesan cheese |
1/2 c. shredded cheddar cheese |
1/2 c. soft white bread crumbs |
Directions:
1. 1. Preheat the oven to 375 degrees. 2. 2. Heat the oil in a skillet; add the bacon and cook for 7 minutes until crisp. Remove the bacon with a slotted spoon and put in a bowl. Add the zucchini to the pan and cook stirring for 5 minutes until soft. Remove with slotted spoon and add to the bacon, mixing well together. 3. 3. Spoon mixture into four 3/4 cup heat proof dishes, dividing it equally between them. 4. 4. Beat the eggs, milk and cream together in a bowl and season to taste. Pour the mixture over the bacon and zucchini in the dishes. 5. 5. Bake in the oven for 5 or 30 minutes just until the mixture is set. Do not over cook the egg mixture as it will become curdled and watery. 6. 6. Preheat the broiler to moderate and mix the cheese and bread crumbs together in a bowl. 7. 7. Remove the dishes from the oven, sprinkle the top with the cheese and bread crumb mixture. Broil for 3 minutes until the topping is golden. Serve at once. |
