Versatile recipe that can be served alone as a salad, or on a bed of green, or as a sandwich filling. Easy and tasty! Adapted from Ultimate Southern Living cookbook. Ingredients:
6 large hard-boiled eggs, coarsely chopped |
1 cup chopped celery |
3 green onions, chopped |
7 slices bacon, cooked and crumbled |
1/2 cup mayonnaise |
1 tablespoon prepared horseradish |
1/8 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons chopped fresh parsley |
Directions:
1. Combine first 4 ingredients in a large bowl; set aside. 2. Combine mayonnaise and next 3 ingredients; fold into egg mixture Sprinkle with parsley and serve. 3. Salad can be chilled up to 24 hours; bacon will soften slightly. 4. Serve this as a salad or as a sandwich filling. |
