Bacon And Coriander Pancakes |

These are very different but so good. We love them. I like to serve them when I make brunch. Everyone loves them. They are easy but so full of great tastes. Enjoy Ingredients:
12 slices bacon |
1 cup flour |
2 eggs beaten |
8 ounces milk |
2 tablespoons finely chopped coriander leaves |
Directions:
1. Dice bacon finely and set it aside. 2. Sift flour into a bowl and make a well in the middle. 3. Stir in eggs and half the milk and beat until batter is smooth. 4. Gradually beat in remaining milk then stir in the chopped coriander. 5. Fry a heaped tablespoon of bacon in a small pan until it is crisp. 6. Pour enough batter for one pancake over the bacon and fry until the underside is light brown. 7. Turn it over and fry the other side. 8. Turn the pancake out onto a clean tea towel and fold the towel over it to keep it warm. 9. Repeat until all the pancakes are cooked. |
