Ingredients:
1 egg
1 cup milk
1 cup (8 oz.) sour cream
1 tablespoon butter
2 cups pancake or biscuit mix
6-8 strips bacon, cooked and crumbled
1 cup (4 oz.) shredded cheddar cheese
Directions:
1. Beat egg, add milk, sour cream and butter.
2. Stir in pancake mix; mix well. Fold in bacon and cheese.
3. Bake in preheated waffle iron.
4. Yield: 12 (4-inch square) waffles.
