Bacon and Cheese Souffles |

Don't be intimidated because it says souffle, as this couldn't get any easier. Ingredients:
3 tablespoons butter |
3 tablespoons flour |
3/4 cup milk |
3/4 cup cheddar cheese, shredded |
1 tablespoon mustard (grey poupon type) |
4 slices bacon, cooked and crumbled |
4 eggs, separated |
Directions:
1. Preheat oven to 350 degrees. 2. Melt butter in medium saucepan on medium heat. 3. Stir in flour. 4. Cook 1 minute. 5. Gradually add milk, stirring until well blended. 6. Cook and stir until mixture comes to a boil. 7. Remove from heat. 8. Add cheese, stiring until melted. 9. Stir in mustard and bacon. 10. Cool slightly. 11. Stir in egg yolks, 1 at a time. 12. Beat egg whites with electric mixer on medium heat until stiff but not dry, about 5 minutes. 13. Gently fold into yolk mixture. 14. Pour into 12 lightly greased nonstick muffin cups. 15. Bake 25 minutes or until puffed and set. |
