Bacon and Cheddar Whipped Potatoes |

Serves 4 Ingredients:
4 slices bacon, cooked, drained, and diced |
1 1/4 cups cheddar cheese, mild, grated |
4 large potatoes, peeled and cut |
2 tablespoons butter |
1/2 cup nonfat milk |
salt |
pepper |
Directions:
1. Cook the potatoes in water until soft, then drain. 2. Place in a mixer bowl and add butter and cheese while still hot. 3. Add a little milk and start the mixer on low. 4. Increase the speed and add milk as needed until light and fluffy. 5. Add the bacon and blend well. 6. Check seasonings. |
