Bacon and Cheddar Stuffed Mushrooms |

I found this recipe in a newspaper database. I haven't had a chance to try it yet, but it sounds delicious and I wanted to put it out here for safe-keeping. Ingredients:
3 slices bacon |
8 cremini mushrooms |
1 tablespoon butter |
1 tablespoon onion, chopped |
3/4 cup cheddar cheese, shredded |
Directions:
1. Cook bacon until crisp. Drain, dice and set aside. 2. Preheat oven to 400. 3. Remove stems from mushrooms setting caps aside. Chop stems. 4. Melt butter in saucepan. Add mushroom stems and onion. Cook until onion is soft. 5. In medium bowl, combine the bacon, 1/2 cup of the cheddar cheese and the cooked mushroom stem/onion mixture. Mix well. 6. Divide mixture among mushroom caps. 7. Bake in preheated oven approximately 15 minutes or until cheese melts. 8. Remove from oven and sprinkle with remaining cheese. |
