Bacon and Cheddar Mashed Potatoes |

You'll make this recipe time and time again!! Tailor the flavors to suit your preferences by using Swiss Cheese instead of cheddar or proscuitto instead of bacon. Ingredients:
2 1/2 lbs baking potatoes, cubed, peeled |
1 cup extra-sharp cheddar cheese, shredded |
1 cup 2% low-fat milk |
1/2 cup green onion, chopped |
2 tablespoons sour cream, reduced fat |
1/2 teaspoon salt |
1/2 teaspoon fresh ground pepper |
4 bacon, slices cooked and crumbled (drained) |
Directions:
1. Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender. 2. Drain and return potato to pan. Add cheese and milk; mash to desired consistency. Cook 2 minutes or until thoroughly heated, stirring constantly. Add onions and remainiing ingredients, stirring to combine. |
