Bacon And Cheddar Breakfast Quesadillas

BACON AND CHEDDAR BREAKFAST QUESADILLAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gee Estate in Quinlan, Texas in 1994.
Ingredients:
1 pound bacon
1/2 cup chopped green onions with tops
4 eggs
1/2 cup chopped tomatoes
4 large flour tortillas
2 cups shredded pepper jack cheese
sour cream
salsa
Directions:
1. Cook bacon in large skillet and cook over medium heat until browned.
2. Drain off any drippings then remove to paper towels and set aside.
3. Add eggs to same skillet then scramble until eggs are set but not dry.
4. Remove eggs and set aside then place 1 tortilla in same skillet.
5. Top with half the eggs, cheese, bacon, onions and tomato.
6. Heat until cheese melts then top with another tortilla.
7. Remove from skillet and cut into six equal wedges.
8. Repeat to make second quesadilla then serve hot with sour cream and salsa.
