Bacon Amp Chive Potato Salad |

There must be a million different recipes for Potato salad, but this one is really yummy! Ingredients:
6 cups quartered unpeeled red potatoes |
3/4 cup mayo |
2 tbsp stone ground mustard |
8 slices bacon, cooked and crumbled |
1/4 cup green onions |
1/4 cup chopped chives |
olive oil |
Directions:
1. Boil potatoes until tender (need to leave a little crunch to them) and drain. 2. Put the potatoes back in the pot and drizzle with a little olive oil (so the potatoes don't soak up the mayo dressing while still hot) 3. Mix together the mayo and mustard 4. Add the potatoes to the mayo/mustard dressing 5. Mix lightly 6. Add the bacon, chives and green onions 7. Mix all together lightly and refrigerate. |
