A colorful layered cabbage salad that's perfect for barbecues and picnics. Land-O-Lakes Cookbook. Ingredients:
1/2 cup sour cream |
3 ounces cream cheese, softened |
2 tablespoons fresh parsley, chopped |
1 teaspoon salt |
1/4 teaspoon black pepper |
3 tablespoons milk |
1 tablespoon fresh lemon juice |
4 cups red cabbage, shredded |
10 ounces frozen peas, thawed, drained |
1 cup carrot, shredded |
1 cup sliced cucumber |
2 tablespoons fresh parsley, chopped |
Directions:
1. in a small bowl stir together all dressing ingredients. 2. in large bowl layer 2 cups cabbage, 1 cup peas, 1/2 cup carrots, and 1/2 cup cucumber. 3. pour 1/2 cup dressing over salad. 4. repeat layer. 5. pour remaining dressing over salad. 6. sprinkle with 2 tablespoons parsley. |
