This makes a great side dish or a main dish as well! It's yummy, high fiber, and it helps you get your 5-a-day in! Ingredients:
1 cup black beans |
1 tablespoon butter |
1 cup chopped green pepper |
1/2 cup chopped tomato |
1/2 cup chopped celery |
1/4 cup chopped onion |
1/4 cup shredded mexican cheese |
salt (optional) |
pepper (optional) |
Directions:
1. Melt the butter in a pot or a skillet. 2. Combine the beans and veggies in the pan and cook for about 10 to 15 minutes, stirring occasionally. 3. Pour into a bowl and top with cheese and sour cream. Add spices if desired. 4. Have a fiesta in your mouth! |
