Easy to make with a touch of rum. Great with rice or mashed potatoes Ingredients:
1 chicken ( 2 1/2 to 3 lbs ) cut up |
2 tbsps. cannola oil |
2 cans (13 oz. )mushrooms |
1/2 cup onions, chopped |
2 cups poultry stock or water |
2 bay leaves |
1/2 cup bacardi light rum |
2 tbsp. flour |
1/2 tsp salt |
1/4 tsp pepper |
Directions:
1. Brown chicken in oil. 2. Add chopped onions , mushrooms, continue cooking. 3. Add stock or water, bay leaves, rum, salt & pepper (to taste) 4. Continue cooking at medium heat for one hour. 5. Mix flour in 2 Tbsp. of water until smooth. 6. Add to mixture; heat for additional 10 to 15 min. 7. Serve with rice or mashed potatoes. 8. Serves 6. |
