Baby Spinach With Hot Bacon Dressing |

Love how the dressing slightly wilts the spinach Ingredients:
salad |
1 lb. baby spinach |
dressing |
1 strip center cut bacon, chopped |
1/3 cup shallot, thinly sliced |
1/4 cup red wine vinegar |
2 tbls. honey |
1/2 tsp. dry mustard |
cracked pepper to taste |
Directions:
1. Cook bacon until crisp
2. Remove bacon from pan and drain on paper towel
3. in bacon drippings, add shallot and cook until tender
4. Stir in remaining ingredients
5. Bring to a boil
6. Serve immediately over spinach
7. Sprinkle with bacon pieces
