This is eggs-actlly what one person can enjoy anytime of the day! Ingredients:
2 large eggs |
1 cup fresh torn baby spinach leaves |
1 1/2 tbsp. good grated parmeson cheese |
1/4 tsp. onion powder |
1/8 tsp. nutmeg |
salt & pepper to taste |
Directions:
1. In a bowl beat the eggs 2. Stir in the baby spinach and Parmesa 3. Season with the onion powder,nutmeg,salt,and pepper. 4. In a small skillet,coated with cooking spray,cook the egg mixture over medium 5. heat about 3 minutes,until partially set. 6. Flip with a spatula,continue cooking 2-3 more minutes,or to your desired doneness. |
