A Warm Bacon Vinaigrette lightly dresses Baby Potatoes and spinach for a tasty-and fast-side dish. Ingredients:
1 pound baby potatoes, quartered |
2 center-cut bacon slices |
2 tablespoons cider vinegar |
1 tablespoon olive oil |
1 tablespoon dijon |
1 teaspoon brown sugar |
1/4 teaspoon salt |
2 cups spinach |
1/4 cup green onions |
Directions:
1. Place potatoes in a saucepan; cover with water. Bring to a boil. Cook 8 minutes; drain. 2. Cook bacon in a skillet until crisp; crumble. Combine drippings, vinegar, olive oil, Dijon, brown sugar, and salt in a bowl. Add potatoes and spinach. Top with green onions and bacon. |
