Baby Leeks with Parsley

Easy way to prepare leeks. Fatter, mature leeks can be used but this tastes better with the little ones.
Ingredients:
2 1/4 cups sliced baby leeks
1 tablespoon olive oil
1/2 lemon, juice of
salt and pepper
2 tablespoons flat leaf parsley
Directions:
1. Put enough water in large pan to cover the leeks and bring to a boil Cover anbd cook gently until leeks are very tender and easily pierced with a knife point.
2. Drain.
3. Add olive oil and lemon juice Season with salt and pepper Sprinkle with parsley and serve.
