It took forever but I finally got it work out right. These are great for the whole family or to make and freeze to defrost single portions. Cooking time is apoximite per pancake. Ingredients:
2 eggs |
1 1/4 cups flour |
3/4 cup infant cereal, any flavor |
1 teaspoon baking soda |
1 teaspoon salt |
1 tablespoon baking powder |
1 tablespoon sugar |
2 cups buttermilk |
2 tablespoons oil |
Directions:
1. Beat in eggs in a mixing bowl. 2. Add remaining ingredients and mix until smooth. 3. Cook in a hot non-stick pan until top is full of bubbles, then flip and brown the other side. 4. Serve with syrup. |
