This carrot side dish is a beautiful addition to any table, be it a casual dinner or a fancy Thanksgiving feast. The flavors are mellow and sweet with a tangy twist. Ingredients:
2 cups vegetable broth |
2 lbs baby carrots (try the organic kind with the greenery still attached) |
1 tbsp butter |
1 tsp chopped fresh dill |
1 tbsp chopped fresh chives |
1 tbsp lemon juice |
dash salt |
dash pepper |
Directions:
1. Place broth in a large pot and bring to a boil. 2. Stema the carrots for 10 minutes, or until crisp-tender. 3. Transfer carrots to a large bowl and add remaining ingredients. 4. toss well and serve. |
