Baby Bokchoi And Avocado Salad |

Found on Calif. Avocado site. Avocados are a winter veggie/fruta? enjoy!! serve to company!! way delicious!!! Ingredients:
dressing |
olive oil 1/2 cup(2 t.) |
rice vinegar 1/4 cup |
white sugar 1/3 cup (i will cut back next time) |
3 t. soy sauce |
1 tsp. fresh ginger, grated finely |
1 clove garlic, minced |
1 tsp. toasted sesame oil |
1 tsp. sriracha (i doubled) |
combine all in a small jar, and shake well. let marry flavors an hour or 2. |
6 baby bok choi s, slice in half lengthwise ( lightly steamed broccoli will sub well) |
2 tablespoons red onion, chopped |
2 avocados , diced |
1/2 cup cashews (i omitted) |
2 t. sesame seeds, black and white in a 350 degree oven, toast the nuts and seeds, checking and stirring every 4 minutes. ( i heated the oven to 370, and the sesame seeds were crisiped after about 8 minutes. |
