Baby Bok Choy With Mushrooms |

This is a simple braised vegetable dish that I adapted from one found on another site. Ingredients:
1/2 tablespoon bacon grease |
1/2 tablespoon oil |
4 garlic cloves, minced |
6 heads baby bok choy, halved, washed and de-cored |
12 medium button mushrooms, sliced |
6 medium cremini mushrooms, sliced |
1 cup chicken stock |
1 tablespoon soy sauce |
salt and pepper, to taste |
2 teaspoons chives, chopped |
Directions:
1. In a hot skillet, heat oil and bacon grease. Saute garlic until aromatic, about 2 minutes. Add bok choy, mushrooms, salt, and pepper and cook for 3 minutes. Add stock and soy sauce, simmer for 20-30 minutes. Stir in chives. Serve hot. |
