BABY BLUEBERRY PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Carmichael Estate in Richardson Texas in 1982. Ingredients:
3/4 cup milk |
1/2 cup unbleached all purpose flour |
2 large eggs |
1-1/2 tablespoons granulated sugar |
1/2 teaspoon pure vanilla extract |
3 tablespoons unsalted butter |
1 tablespoon confectioners' sugar |
1-1/2 cups fresh blueberries |
Directions:
1. Preheat oven to 450 with rack in center of oven. 2. Have a glass pie plate or cast iron skillet ready. 3. Mix milk, flour, eggs, sugar and vanilla until smooth in a blender. 4. Put butter in pie plate or skillet and place in hot oven until butter is melted. 5. Brush butter up sides and onto rim of pan so the entire inside surface is well coated. 6. Slowly pour batter into pie plate or skillet and bake 20 minutes. 7. Reduce oven to 350 and continue baking 10 minutes longer. 8. Remove from oven and sift confectioners' sugar over top. 9. Serve immediately with fruit spooned into center. |
